Kefir or kephir is a fermented milk drink similar to a thin yogurt that is made from kefir grains.

The drink is an ancient superfood, originated in 1884 in the North Caucasus (Russia), and from there it spread to Europe and the US, where it is prepared by using Cow, Goat or Sheep milk with kefir grains. These dehydrated kefir grains or active kefir milk kefir grains are left in a liquid such as milk or water to ferment for about 24 hours.

Another type of kefir is Water Kefir which is prepared with water and sugar.

Traditional kefir is fermented at ambient temperatures, generally overnight. The duration of fermentation varies according to the weather conditions. In winter, it takes long to ferment which is around 48 hrs. In Summer, the fermentation time is within 24 hrs.
