Classic Lavender Matcha Latte

 

Ingredients: 

1 tsp dried culinary lavender, ¼ cup hot water, 1 tbsp honey, 1½ tsp matcha, 2 tbsp warm water (80°C), ¾ cup milk, ice.

 

Method: 

Steep lavender 4 minutes (no longer — it turns soapy), strain, stir in honey while warm, chill. Fill a glass with ice, add milk and the lavender syrup, stir, then float whisked matcha on top. Cream base, green cap.

 

Lavender Vanilla Oat Matcha

 

Ingredients: 

2 tbsp lavender syrup (½ cup water + ½ cup sugar + 1 tbsp lavender, simmered 5 min, strained), 1½ tsp matcha, 2 tbsp warm water, ¾ cup oat milk, ¼ tsp vanilla, ice.

 

Method:

Whisk matcha smooth. Combine syrup, vanilla, and oat milk over ice. Pour matcha over the back of a spoon. Oat milk's natural sweetness plus vanilla softens matcha's grassy edge the most drinkable of the three.

 

Lavender Honey Cold Foam Matcha

 

Ingredients: 

1½ tsp matcha, 2 tbsp warm water, ¾ cup milk, ice, foam: ¼ cup cream + 1 tbsp lavender syrup, frothed.

 

Method:

Whisk matcha, pour over iced milk, then spoon lavender cold foam on top. The lavender stays in the foam so you get floral on the first sip and clean matcha underneath it shifts as you drink.
