Ingredients:
1 tsp dried culinary lavender, ¼ cup hot water, 1 tbsp honey, 1½ tsp matcha, 2 tbsp warm water (80°C), ¾ cup milk, ice.
Method:
Steep lavender 4 minutes (no longer — it turns soapy), strain, stir in honey while warm, chill. Fill a glass with ice, add milk and the lavender syrup, stir, then float whisked matcha on top. Cream base, green cap.
